Raw Honey

Every jar here is raw, unfiltered honey from our own hives in the Noosa hinterland. We pull the frames when the comb is capped, strain the honey once through a coarse mesh to keep the pollen in, and jar it — no heat above hive temperature, no blending across seasons, no sugar feed for the bees.

Raw honey behaves nothing like the filtered stuff on a supermarket shelf. The flavour changes through the year with whatever’s flowering — paler and citrusy off the spring eucalypts, deeper and caramel once the banksia and tea-tree take over by autumn — and it crystallises within a few months, which is the proof it was never heated. Stand the jar in warm water for ten minutes and it loosens straight back up.
